Rasgulla is an India sweet, originated from Odisha, made by chhena and semolina dough. Chhena is an Indian cheese curd made from water buffalo milk and lemon. Mixed with durum wheat, chhena will be kneaded into cheese dough and be shaped into small balls. Unlike gulab jamun, rasgulla is simmered in sugar syrup instead of being fried. There are other sweets related to rasgulla. For example, Khira sagara, which is literally “ocean of milk” in Odia language, is served chilled with milk thicker than ras malai. Derived from Khira sagara, Ras malai, or called rossomalai, is cooked in milk with saffron, pistachios and stuffed with kheer. These sweet cheese balls are the non-fried relatives of Ledikeni, Rasabali and other sweet balls made from chhena or khoya.
