Originated from Italy, Ravioli are made of thin pasta dough. Therefore, usually served with broth and sauce like pasta, Ravioli’s wrappers are chewier and perfect for simmering. Common fillings of Ravioli are cheese, herbs and vegetables, eggs or meats. Most Ravioli are square in shape and stuffed like a pillow. However, other forms like semi-circular or ring-shaped can be found in different regions. The proportion of vegetables and other ingredients determined whether the dumpling is a Ravioli or Agnolotti. According to the regions, the fillings varied. For instance, in Rome and Latium, people add ricotta cheese, spinach, nutmeg and black pepper in Ravioli. In Sardinia, ricotta and grated lemon rind are common filling of ravioli.
